This is just a bunch of leftovers from the furthest corners of my fridge thrown together and it tasted great for lunch!
Summer Quinoa Salad
Quinoa, cooked per package instructions
Tomato, diced (mine were bright orange gifted to me from Jodi's garden)
Feta cheese, crumbled
Leftover grilled zucchini
A good glug of red wine vinegar
A drizzle of extra virgin olive oil
Salt and pepper to taste
